Meet your expert guide near one of Madrid’s historic markets, where locals have shopped for over a century. Step inside to explore a food lover’s haven of high-quality Spanish products, chat with vendors, and pick up fresh ingredients for your cooking class.

Next, slip behind the scenes of a renowned Huertas neighborhood restaurant into a private kitchen space reserved for your small group. Here, a friendly local chef welcomes you with a classic aperitif of sweet vermouth, a cheese plate, and a Basque-style tapa. While you sip and snack, watch as your chef prepares a traditional crema catalana dessert for later.

Then it’s your turn to get hands-on. Working alongside your group, you’ll make a second tapa—homemade croquetas—before tackling the star of the day: authentic Valencian paella. As you cook, your guide will share the stories, traditions, and techniques that define these dishes, including how to recognize true paella Valenciana.

Finally, sit down to enjoy the dishes you’ve prepared, paired with beer or wine. You’ll leave with a full stomach, a deeper appreciation of Spanish cuisine, and recipes you can easily recreate in your own kitchen.
